Just to the north of the Arboretum’s Display Gardens are two smaller flowerbeds jam-packed with herbs.  The north bed (closer to Children’s Garden entrance) is a collection of culinary herbs while the south bed is a collection of miscellaneous herbs of interest.  With such a wide variety, there is something for everyone!  The culinary herb bed alone includes:

  • Cilantro
  • Chamomile
  • Rosemary
  • Lemon thyme
  • Lemon Sage
  • Lemon Balm
  • Chives
  • Pinneaple Sage
  • Epizoat
  • Fennel
  • Dill
  • Spearmint
  • Peppermint
  • Stevia
  • Oregano
  • Taragon
  • Sorrel
  • Flat Parsley
  • Curly Parsley
  • Lavender
  • Hops

Here are a few of the herbs that are looking the best right now:

Looking for a way to use your fresh herbs?  Here are a few ideas to get you started:

Cooking Combinations:

  • Marjoram, Lovage and Thyme
    Coriander and Chilies
    Chives and Dill
    Dill, Mint and Parsley
    Oregano, Thyme and Italian Parsley
    Tarragon and Lovage
    Sage, Thyme and Chives
    Lemon Verbena and Tarragon
    Mint , Lemon Balm and Dill
    Dill, Lovage and Chives
    Oregano, Basil and Thyme

Try these combinations for making your own flavored vinegars:

  • Rosemary, Raisins, Orange Peel, Garlic and White Vinegar
  • Sage, Parsley, Shallots and Red Wine Vinegar
  • Chilies, Garlic, Oregano and Cider Vinegar
  • Mint, Honey, Cardamom Seed and White Vinegar
  • Rose Petals, Violet Petals and Rice Vinegar
  • Dill, Nasturtiums, Garlic and Cider Vinegar
  • Fennel Leaf, Garlic, Parsley and White Wine Vinegar

 

Or these combinations for homemade herb butters:

  • Mint and Dill
  • Lemon Verbena and a dash of grated orange peel
  • Basil, minced roasted sweet pepper, Oregano, Thyme and pureed shrimp
  • Marjoram and Garlic
